Oh, you'd get one. Chicks dig stuff like this. Take her to Target or some place and tell her you need help picking out a shirt or something. At the grocery, ask her to help you pick out some wine. Etc. She'll feel VERY important and smart. Trust me!

Just out of curiosity, if dinner and a play is your idea of a "very casual" date, what is a serious date?
I'd say dinner and a play is a rather formal date.
Ole timer makes a lot of sense, but getting your oil changed is definitely not a good idea.
You could take her to lunch and then ask her to help you get some wine or a shirt (not at Target, though). Sometimes that is a really good way to figure out if you like their personality. I wouldn't run boring errands. And limit it to one!!! I love my wife to death, but even she starts to drive me nuts on the errand days when you have to fight for a parking space and sit in traffic.

+1 on indoor rock climbing, particularly since you're a guy and so you'll get a chance to show off by doing some harder climbs. Great choice if you do your pull-ups.
Mini-golf is good because you break the ice with a little trash talk. No one takes mini-golf trash talk seriously so it keeps things light and fun and you can use the game as a built-in source of conversation.
Go-karting would be fun for similar reasons but perhaps expensive.
Skip the play for the same reason you'd skip the movie. Also it's too expensive. I don't want to sound like a PUA, but taking a first date to a play does seem like you're trying too hard.

If she is easy going and can deal with something casz, just hang time like that, then she really likes you, or is just cool.
Either way it is a positive, she can always be a friend.
Offer to take her to the mini-mart to buy beer and funyons and then head on over to the lake. Show her the fringe benefits of dating an older man.

If the weather's nice, take her to a farmers market. Walking around first dates are better than sitting down staring at each other first dates (dinner, coffee, etc.). Farmers markets near me are incorporating more entertainment too (bands, art, etc.). If you guys hit it off, pick up some food at the market and make dinner together later.
If you really hit it off, pick up some breakfast foods too!

"Active" first dates don't work. Too many distractions.
Not only that but if you don't get along in the first 5 minutes into a hike, climb or bike ride you still have to spend a few uncomfortable hours together.
Have a conversation. Save the outdoor activities for the second date and indoor activities for the third.
