What's a good somewhat minimalist trainer that doesnt have a built up heel or medial post but has superior cushioning?
Your question describes the shoes I use, which are the Nike Skylon, Brooks ST3 Racer, and the Pearl Izumi Streak. I rotate these three pretty constantly and like them all. ST3 has a small medial post, but I have never really noticed any difference between it and the other shoes. All three are between 8 and 10 ounces, have heels that are roughly the same height as the toe, and have at least a little cushion to them.
I'm not sure about the Brooks or Pearl Izumi, but if they are anything like the Skylon they are going to have a pretty big heel drop. I would personally recommend Newton's, either the distance or the gravity; they have really nice cushion but are still very light with a very low heel drop. I also personally love the Brooks green silence, and I've heard great things about the Saucony Kinvara which seem to be pretty cushy.

I don't know about the Racer ST3, but in addition to being posted, the ST4 has a 12mm heel toe offset. They're lower to the ground, but that's the same as the majority of their trainers, and the same as the T6 Racer. I like the T6 a lot, but Brooks' penchant for putting a high heel toe offset in their flats is part of the reason I like it.
The Saucony Kinvara only has a 4mm offset and is pretty soft and cushy for a shoe its weight. Most neutral cushioned shoes seem to be slightly better cushioned though. Newtons have between a 2-3mm offset, but I've never worn them, so I don't know what the cushioning is like. The Nike Free 3.0 has a 4mm offset, and has better cushioning than most flats I've worn, but not so much for a trainer.
The Saucony A-4. It has a 4MM drop from heel to toe,
is around 6.4 ounces for Mens size 9 and feels pretty
cushy to me.
If you're okay with heel heights, Brooks T6 or Launch is where it's at. Asics Tarther is good. Adidas Adios.
If you want less heel height, Asics Hyperspeed and the Nike Frees basically last forever.
