I hear Nike make the best racing shoes.
Which ones have stability, have more cushion are for specific distances etc?
Thanks.

Lets see...explain them:
well, they're light, have a plastic piece under the ball of your foot that you put spikes in to get grip on the track
Lets see... try this d-bag, the OP said racing flats, not track spikes.

A lot of companies make excellent road flats, so don't get hung up an Nike. I would argue that Adidas has a more comprehensive line, and Brooks, Mizuno, and Saucony all have pretty solid offerings.
However, since you asked about Nike
Nike Marathoner- heaviest, most cushioned and stiffed flat that they make. Great shoe for half to full marathon distance or for quicker paced training (tempo runs, etc). Neutral shoe, but still enough to provide a little stability.
Nike Lunaracer- Very soft and very light, yet cushioned enough for a marathon. An interesting flat, to say the least. Light stability again, but not due to any posting.
Nike Katana Racer- very light, firmer than the Lunaracer, much more flexible. More designed for 5k-10, but you can use it for longer races if you have tough legs.
Nike Mayfly- very very light, 15k max unless you have legs of steel. Not very durable. Very inexpensive.
Nike Streak XC- similar to the Katana, but more flexible and a little softer, plus a much looser upper (fits similar to a trainer, IMO). Also much cheaper than the Katana, good shoe for up to Half Marathon in my experience. Good on the track for a 10k as well.
Am I forgetting anything from the current line?

Should read "... but stiff enough to provide a little stability."
i'm not sure if they are still making the katana star (possibly discontinued?) it is the only flat in nike's lineup that offers zoom air in the rearfoot and forefoot. it is a bit stiffer than the marathoner as it has a long tpu piece running up through the metheads on the medial side of the shoe. overall it is more of a half marathon or marathon shoe.
Brooks T6 Racer
~ Curved last... 5.5 ounces... worn by Brian Sell over the Marathon distance but suggested for up to the Half Marathon... one of the top 2 selling racing flats on the market
Brooks Racer ST 4
~ Semi-curved last... 7.5 ounces... mild stability post for mild pronation control... one of the top stability racing flats on the market and one of the top 2 selling racing flats on the market (see above)
Try the Mizuno Ronin 2 (orange and black) best neutral flat
on the market.
