I assumed it had to do with him giving something to 7 different people. 7 parts of himself, 7 pounds of flesh essentially. It's a bit biblical with the number 7 being the perfect number, and straight forward at the same time. But that was my take on it.

I also inferred that it was an allusion to Shakespeare's, "Merchant of Venice" where the character is looking to obtain a pound of flesh for the injustices done to him.

In the movie "seven pounds" Will Smith's character is responsible for the deaths of seven people in a car accident, one of them being his wife. The whole movie is about him helping seven people in order to pay his debt, and ultimately give his life so another can live. its a real tear-jerker, and is one of his better performances.
