Okay, here we go.
First, I believe the term is "HOOK 'em, 'Horns"--i.e., metaphorically speaking, "stick the opposition with those long horns, you University of Texas Longhorns."
Second, the apostrophe goes in place of what's missing. What's missing from em? Right, the initial th. Hence: 'em is the correct punctuation.
Third, the link takes us to one of the worst-written pieces of (alleged) English ever. OP, if that's your work I sincerely hope that English is not your first language--or at least that you're not a student at the University of Texas. What an ignoramus.
Those paragraphs look like they were originally penned in German by some non-German-speaking nursery school lummox, then run through several different languages on an online translator until they finally reached an "English" version, then got condensed by some program that spits out keywords.

No, exactly. He's a normal dude with an athletic physique (not 'anorexic runner athletic') who might be ugly but, oh yes, just happens to be one of the best known names in sport.
