probably play alot of games that encourage people to work together and help each other. i don't know though, i've never been
at a camp i went to there were lectures about physiology and a former great runner spoke to fill in the time. we also ran twice a day and just kind of lazed around talking and watching tv or sometimes played soccer or volleyball.

One time, in running camp...
Just twice a day? I heard back in the 70's at some camps they ran 3 times a day.
Tons of ultimate frisbee.

at my camp, we found an old anchor with a rope tied to it and threw an end of the rope around a high branch and then would raise the anchor and let it free fall and smash stuff. that lasted nearly 3 hours one day.

A good game of grab ass should provide hours of fun
to give you at least one SERIOUS answer, when I was at high school running camp (and college too, actually), we ran each morning, showered, had breakfast, did some sort of learning (VO2 max, strategy, form, etc), then had lunch. Free time, organized activity (volleyball game, obstacle course, hike, etc.) then afternoon workout....either a speed typ workout, or a water workout, alternately. Then dinner, and free time again. Then there was usually an evening closing get together where we did skits, watched a movie, played some sort of game, etc. Hope that helps at least a little. I wouldn't try to go there with absolutely no plan....it will get boring and the kids will definitely find something to do to fill the time, usually not good stuff....in our little time off we did lots of pranks.
that sounds like the lamest camp ever. organized activities i scoff at, and learning? just sleep, eat, hang out, swim, volleyball, wiffleball, ultimate, hiking, guitar-playing, reading, chilling, when not running. makes for one of the greatest weeks of the year.

You run...
to get some strength stuff in, get them rowing or cayaking or canoeing. just for fun, a rafting trip would work. also, hiking up a mountain would work.
There are camps that you do nothing but run and hang out. Some take you on cool runs or do activities like white water rafting and have athletic tournaments. The serious ones, usually have a schedule something like this:
7:15am wake up
7:30 15-25 min easy run
8:30 Breakfast
9:30 Mini talks (4 topics each day)
10:30 Sport time (Frisbee golf, wiffleball, games)
12:00 Lunch
1:00 Rest Time / movie
3:30 Active warm up
4:00 Main run
5:15 Static stretching in your running groups
6:30 Dinner
7:30 Guest Speaker
9:00 Evening Social activity
10:00 Quiet time in the cabin or movie
11:00 Lights out
