Which Olympic sport would you literally have to be paid to watch? Apparently the least favourite sport is race walking followed closely by equestrian. I personally think they should introduce horse race walking. I’d pay to watch that.

Any “sport” that requires judges to determine who wins. I don't consider them real sports. Gymnastics, figure skating, diving, breakdancing are all such sports. I’m not saying they don't require athletic skill, they are just not real sports, and thus a bore to watch.
Race walking (technically part of Athletics!) is by far the dumbest event. They're not even actually walking and no one gets DQ'd for violating the rules! Of the 32 Olympic sports, the worst has to be Breaking (break dancing). Why on earth they added this to the Olympics I do not know. Men's football is pretty dumb because of the U-23 + 3 overage players rule. Skateboarding isn't great either and should be left to the X-games. Every other sport has their place in the Olympics and are intriguing in their own way.
Underrated Olympic sports are Modern Pentathlon (shooting, fencing, horseback riding, swimming, and running all in one event; pretty relevant test of a 19th century warrior) and all of the fighting sports (boxing, fencing, judo, shooting, taekwondo, and wrestling).
The classic top 3 are still Athletics, Swimming, and Gymnastics.

I generally hate all of the sports that are judged, but gymnastics features some of the greatest athletic ability in the world, so I give it a pass.

And American football is a simulation of trench warfare (e.g. WWI). Any other sports that directly simulate or test war skills (as opposed to personal combat like fencing, wrestling, etc.)?

You exclude rhythmic gymnastics and beach volleyball, the two sexiest events in the games?! The flexibility of those smoking hot Eastern European gymnasts with too much eye shadow! And the a$s slapping of those bikini-clad vball players! Hell this is the highlight of the Olympics come to think of it.

Same here. If they put me in charge I think I'd try to create a third Olympics for judged sports. We'd have the Summer Games at one time and place, the Winter Games at another time and place and the Judged Games at a third time and place.

If you're referring to "football" as what Americans call "soccer," is is essentially a JV sport for the men because the teams are primarily U23. Each team is only allowed three players aged 23 or older. For the women there are no age restrictions.
Flag football is going to be in the 2028 Olympics. That could be interesting. Joe Burrow of the Bengals has said that he would like to be considered for the team.
It may not be the most exciting T&F event but triple jumpers are tremendous athletes.
I used to not enjoy the throwing events but now I find them fascinating, particularly the javelin & hammer. There is something primal and basic that is appealing about them. If I were a field athlete I would want to do one of those events.
