Running fast is fun=stimulating + you have adrenaline and endorphins in your system which feels good and hides how tired you actually are.
Running slow, especially slow enough to actually recover is very boring. And on top of af now all the good feelings are gone, so you can feel how tired your body really is

This is correct.
If you understand the purpose of every run (ESPECIALLY the slow off days), you'll find over time you start to feel better about them. There's a certain high that comes with knowing you're doing exactly what your body needs, and being really consistent with it over months and years.
Don't go fast on easy days because your brain wants you to, you're making yourself slower.
When I have an easy run I don’t take it as seriously, tend not to fuel as well and wear less responsive trainers
Don't turn easy runs into plodfests. Use proper technique with range of motion and springiness reasonably similar to those of fast runs, although with very easy and very controlled effort.

that makes me more tired plus it is too much hassle to get ready and shower twice
Your easy runs are recovery runs from your hard days. So you don’t feel as well on those days.
You do your fast runs after a recovery, so you feel better on those.
You also run with more efficient form which feels better.
Maybe an easy run the day after an easy run would feel easier.

I feel like easy pace only ever feels great during periods of base building when you're not coming off a workout into an easy run.
