I am a high school coach. A few kids on the team have an apple watch. One uses the Strava app on the watch and says that it is not possible to hit a lap button during interval workouts. If he wants to record intervals, he has to end the run and start a new run. Is that correct? Are there any other apps that would do a better job recording interval workouts on the Apple watch?

Tell them to dump the Strava app for real-time recording - it sucks. The integrated/default workout activity app is entirely adequate - no need to even download another app. It can do lap splits on the fly (just double tap the screen), but you can also program the workouts/intervals by time, length, rest, # of reps, etc. You can program warmup & cooldowns too, or even add them with no duration (you just lap split the warm up to move into the workout, or end the entire activity after you cool down as you wish). Also has a good track mode, and you can enter/exit the track mode mid-activity which is neat.
Though Workoutdoors is a good app, it's not necessary. While Garmin and Coros are great watches, also not necessary. If they want to put their apple watch activities on Strava, they can do so without recording the run in Strava; just have Strava import them from Apple Health.
