Does anybody know any elite level college or maybe or high school athletes that post all of their runs/workouts on strava? I’m trying to learn what these people are running and what type of workouts/volume they are doing.

What is your current ability? How long have you been training serious and what does typical training look like for you?
It's beyond cliche at this point, but there truly are no secrets to training.
The training of these top college and high school athletes is not some secret formula, but rather just an emergent pattern from optimizing very simple principles to their specific talent, training history, and training environment. They run as much volume as they can handle, do a lot of threshold/tempo work, do some faster work, repeat.
The specific volume and workouts they do is not in the slightest bit relevant to you unless you can also match their talent, training history, and training environment. Your correct application of the same fundamental principles they are using would likely yield training that looks very little like what they are doing.
For a moment, I thought you’d meant people logging their collegiate academic experience on Strava.
You know: Instead of just consistently going along at the right pace day by day, deciding to muck around for a while then trying to look like a hero on one or two big days (with all-nighters, etc.).
Actually, I suppose that, ahem, tracks,
BREAKING: Athing Mu running 800m in Gainesville on Friday at Holloway Pro Classic
Jakob chugs almost an entire 32-oz sports drink in 6 seconds during interview
I don't believe Jakob is clean. injured and runs 3:26.7 a bit later?
After Jakob's 3:26, Kerr's chance of winning in Paris has INCREASED
Can we talk about how crazy hard this Olympic marathon course is?
