There's no shame for being Mormon, it's just weird to see guys like Casey Clinger competing in the NCAA still. Like he won NXN in 2016 and he's still running in the NCAA today. Simmons won't get the covid year, but that's still a really long time. For reference, their senior year of HS, Cooper Teare outkicked Clinger for 2nd in the Brooks PR mile. And I believe Clinger still has another year of XC eligibility.
I don't think it's even a big deal tbh, although some people disagree with me. But even those people don't have an issue with the religion, just an issue that those athletes get an extra 2 years to compete in the NCAA that no one else gets.

To be clear, they don’t get an extra two years of competing. They are just on average one then two years older than their peers at the backend, if they compete that long.

Anyone can take time off, and for multiple reasons: military service, Peace Corps, religious service. If it was a good idea, more coaches would tell their athletes to go do a couple years in the Army. Two years of physical growth, and it would solve a lot of financial aid issues! Or more coaches could heavily recruit athletes planning on a mission, rather than discouraging it. The fact that this doesn't happen tells you something about what the real issue is.
