I usually take about 10-14 days of completely no running between seasons. Today, 2 weeks removed from having run a 4:20 mile and now, going 7:20s for a regular easy run almost feels like a tempo effort. Was still able to crank out 2 x 500 in 73 to help pace some teammates for time trials surprisingly...
Meanwhile some of my friends will take even more time off (up to 3-4 weeks) but hop back into it without the same problems. Maybe I'm just one of those individuals who have a low baseline level of fitness but is highly trainable? I was mostly sedentary before I took up running so maybe that's why, but that was over 8 years ago, so idk.
