Probably Grand Canyon University. They went from being basically just an online school to a D1 powerhouse in some sports. 10 years ago their main campus was basically little more than a community college.
Their academics are still not worth much and they're known as a safety school of last resort. But it used to be you'd get laughed out if you got a Bachelors there and now you can get a job with one of their degrees.

Acceptance rate has gone from 50% to 20% in 5 years
average SAT from 1200's to almost 1500
NAU for sure. All those National Championships really put them in the center of NCAA distance running which has helped them land top recruits such as Nico Young. Up until 10 yrs NAU was just a forgotten mid major. Now it’s one of the most talked here on this site by fans, haters and the running community in general.

these test optional policies have gotten out of hand, if you have below a 1300 at super selective universities absolutely don’t submit
I'm not sure about Hillsdale but most schools in Michigan ask for ACT scores, not SAT.

Had anyone? I heard of UW Madison from running and Notre Dame was familiar but none of the others until this last year

Longstanding? Why have you literally never heard of one in a movie like the Ivy league or standford or hear about people dreaming of going there. Now Northwesterns is higher than Cornell and Columbia which is the ivy league and University of Illinois at Chicago is right behind. One of the smartest guys I know chose to do his MBA at Northwestern and he said that have Nobel prizes.
