Look up Cal State San Marcos. You have a network of trails less than a mile from campus.

Hidden gem!
I'd suggest Hopkins or UChicago. Both have great weather, are academically easy so you won't be stressed, and are in very safe environments.
Calstate San Marcos also has a disc golf course if you are into that. Note that while there are plenty of hilly trails around, it is not in the mountains. Cleveland national forest is a short drive away if you need a mountain fix. The beach is also a 25-30 minute drive away.
While calstate San Marcos is a decent school, I'm sure there are plenty of other schools that might interest you, depending on you academic interests and career goals. For context, CSUSM provides guaranteed admission for local students with a 3.0 GPA or higher (or at least they did 6 years ago). It was built primarily for local students and a large portion of the student body commutes to campus.

There aren't many single track trails close to UCB. Flatirons are overrun with hikers and their dogs. Sunshine canyon/Dome area isn't that well.
Univeristy of West Florida sits in a forest, with ~20miles of single track connected to the campus. Pretty good weather too, if you don'd mind a little heat in the summer

Nice trails, ran there on vacation years ago. The “beware pythons and gators” sign at the entrance is a nice touch; running there at night is thrilling, every log could mean death

Cal Poly SLO; University of Nevada (Reno); Southern Oregon; Portland State/Reed/Lewis & Clark; CS Monterey; CS San Marcos; Boise State; NAU (the latter can get a bit cold and snowy, but it's mountain cold and not Midwestern 'cold breeze from Canada' cold)
Maybe OSU’s Bend campus and take up XC skiing in the winter? I don’t know anything about the school option there, but it seems like an amazing place for a young single outdoorsy type to live.
Appalachian State in Boone, NC! Lots of trails within 10 miles, many accessible from campus, some take a few minutes to drive to but they are less crowded. Summer watering holes to jump in during your run, a good running culture already established, and the scenery changes with the seasons.

Western Washington University. Incredible trail system in Bellingham. Mountain trails + boardwalk on the ocean both running distance from campus. Plus a track on campus. Get used to the rain though

Colorado Mesa University.
The trail scene is unbeatable in terms of number of trails and variety. Weather year round is pretty good too.
