Tell her that you respect her decision and that you want to take responsibility and thus are getting a vasectomy. Pretend to get the surgery and play it up that you are sore for a few days. Ball her relentlessly. If she becomes pregnant, get really mad and say you don't want to see her cheating ass again.

Honestly for a woman to refuse is annoying. I've been in long term relationships with sexual women who had them for years and not once did I hear "oh goodness my IUD is really bothering me today" they don't even feel it once it's in.
I get that it's"her choice" but it's still annoying that she's against it for some reason. Makes no sense, reminds me of the anti vaxx crowd - clear long term benefits and one crummy day immediately after getting it.
Intimacy without legal protection (ie marriage) is only a liability on you, dude. Even if you don't end up getting her knocked up, the emotional bond you're creating with her is gonna turn her into a crazy ex if you ever break up.
