It’s a combination of pricing what the market can bear combined with some genuinely thoughtful apparel engineering that other brands can also replicate, but most don’t for some reason and when they do, their price point isn’t too much lower.
I've noticed the same thing. I think it depends on the particular article of clothing and what type of running you do as to whether On clothing is worth it or not. I purchased an On t-shirt and ballcap but passed on their vest/jacket with sleeves. I have purchased a ridiculously expensive running jacket but it was Acrteryx made with gore tex active and it has been worth every penny

To each their own I suppose :) coz I almost have the opposite reaction. Their running pants are very well engineered to be breathable but they are not long enough for me (unlike their tops that are all slim and long enough sleeves for me), and I I don’t feel too cold or clammy even with cheaper tights, so I don’t own On pants.
The On weather jacket i I love and have two of them that I got on discount. It has fantastic range of temperature and I can use them from the high 30s all the way down to as cold as it gets in the northeast just with different base layers or weather shirts underneath. The jacket is very breathable because of slits, so it never feels too warm, yet it is surprisingly warm while running. The jacket’s cap is also very well designed with two layers.
Janji makes a raincoat with a similar slit design for breathability at a similar price point, but because raincoats are waterproof, not just water resistant like the On jacket, it easily beads up inside.
When I see surprisingly expensive stuff and can't figure out why, I think "I am not the target audience".
They are kind of going for the Lululemon crowd, right? Works for clothes, but not $400 shoes.
In general, I think paying up for cold weather gear can be justified. You're paying for an actual (more substantial / complicated) product where quality, design, material can make a big difference in performance and durability.
For warm weather gear, I think the differences are really really marginal. $80 t-shirt vs. a nice worn old t-shirt i have in the closet. Almost no difference, if any. Maybe the older worn shirt is actually better.
