I'm thinking ultrarunning, horse racing, curling, and maybe NASCAR or poker. Though it would be debatable on whether ultrarunning is "commonly known".
Thoughts?

you have to be incredibly talented to be the fastest race horse
This woman made the Olympics by gaming the selection process in one of the skiiing events by entering switching alleigances to a weak country, participating in weaker international level events and taking the safest way down and scoring the minimum points. She eventually accumulated enough points to ranked high enough to make the olympics, where she finished last. Not sure if that is what you were going for, but she is technically "world class"

Nope. The talents are different but they all require something. You would needs pure chance event...
Everything takes talent at the very top if there is money involved. Some things take more talent and are more competitive than others. Probably the higher the barrier to entry (either cost or access to facilities) the less talent is required. Horse racing is probably like the NBA in some regards. If you're a full grown man and weigh less than 110 pounds there's probably a good chance you've been a jockey.

It's the horse, and not the jockey, that becomes world-class.
Sailing. I knew a guy who had a chance to be on the US Olympic sailing team after college. He admitted to me that all you needed to become a world class sailboat racer is location, time and money. Anyone can learn how to tack efficiently, manage your points of sail and the wind, fly a spinnaker, etc. You just have to have enough money to be in a yacht club and travel to competitions, live near the coast where you can sail and compete and hang around long enough to get your ranking up.

Secretariat's heart, lungs, brain, and internal organs were all MASSIVE compared to other horses. That's why he was the best
Probably running. Everyone is all woe is I, no talent, yada, yada, yada....
The reality is almost all runners aren’t even close to trying... Not running 100+ mpw(but low mileage), they aren’t in the weight room daily, drills, speed work, diet, nutrition, sleep, rest, recovery, etc.
Not Letsrunners though.... The most talented.

It's both. There are fewer elite jockeys than there are elite race horses.

Some people run their 1st 5k as a freshman in HS in 16 minutes. Some run 20+ minutes. Some people put in the work & run 100mpw to run 2:37. Others run 2:37 with a 14 or 15 minute 5k PB because they're not willing to work in the same way. But the 14-15 minute 5k runner is way more talented & could approach something much faster with the mindset of the 100mpw runner. It's nonsense to not talk about talent & running. Look at how many fast runners had fast parents or how the same families produced multiple children who run.
Ultrarunning for sure

Try being world-class at anything. See how far you get.
Rowing. I had no talent for football, baseball, or hockey - just enough athletic ability to not get cut for varsity teams in high school. Went to college and joined the crew team and the heavens opened up and the angels began singing. Holy crap I’m awesome at this! Best on the team. All you gotta be is the right body type: Tall. I love crew, but the fact that I was tearing it up tells ya something. Great sport, lifelong friendships, raging parties, awesome memories , but I hate to say there really is no talent needed. I mean you gotta be an athlete, but can’t really say you need talent for anything.
Ultramarathon.
Chess? You just need a lip balm that’s link to alpha zero.
No, you need talent to be world class in anything.
