Trump wouldn't plead the 5th. If you're being charged with "high crimes and misdemeanors", it's not helpful to refuse to answer a question on the ground that it may incriminate you.
I think the Democrats are assuming he won't testify. They won't force the issue, they'll just argue that a negative inference should be drawn from Trump's refusal to testify. They can also argue that they gave Trump every chance to tell his side of the story, and Trump refused. It might help a little in the court of public opinion.
