Look, no one can say that Brady is succeeding at his age because of his diet. Likewise, no one can say his diet has no effect and he'd be just as good with McDonalds.
When it comes to diet, we just don't know.
However, there are studies which do back many of his claims.
Maybe people are sensitive to nightshades and FODMAP's.
Lots of studies lately about vegetable oils causing inflammation and cellular damage.
Lots of studies about gluten and grains increasing insulin response which can lead to inflammation.
Fruits have lots of sugar (some not all that much). Lots of studies showing sugar linked to insulin response leading to inflammation.
Of course, there are also studies showing meat leading to cancer. Saturated fats leading to higher cholesterol (and studies showing the opposite).
All these studies use correlation. Correlation is not causation.
Diet is like religion. We all choose our beliefs. We all need faith that our beliefs are the true one. And we all look for studies which back our beliefs.
That said - my diet (religion) is very close to Brady's. Except: I eat more fruits (especially berries), I eat mushrooms, and I eat nightshades (though I try to keep them in balance and focus on greens and cruciferous first), sometimes I'll have dairy, and even gluten (beer, pizza, and sandwich) now and again.
