You don't need to rack your brain for "2-3 reasons" why you're interested in a school. If you have compelling reasons that are unique to this school, sure, but I wouldn't sweat it. If you're fast enough, the coaches are going to follow up regardless of the particular reasons why you are seeking out that school.
Many/most schools have an online form to submit. I would suggest submitting the form first then follow up with an email saying (a) I submitted a form but wanted to follow up via email too, and (b) give the relevant info about yourself in summary fashion.

You need at least one. Hell, it could be something like “I’ve followed ncaa XC closely and am impressed by people’s progressions as well as their closeness - the latter would work better if you knew someone on the team”. But don’t be a moran and say “it’s ranked #3 in the country and i think it’s the best I can get into”

This right here. Always do the recruiting form first. Coaches get far too many e-mails and this is now vacation/family time for them. Your e-mail will get buried in the hundreds of similar correspondences that they receive beginning June 15. An assistant coach or recruiting coordinator is monitoring those forms and elevating potential candidates to their boss.
